Pancakes with Coffee Mascarpone Mousse, Streaky Bacon, Raspberries & Maple Syrup

1 Pack of Dromod Pancakes

1 Pack of O’Neill’s Dry Cured Streaky Bacon

100g of Mascarpone

1 tbs of instant coffee granules

2 tbsp of local honey

100g of raspberries

Maple syrup
- Fry or grill the O’Neill’s Dry Cured Streaky Bacon until crispy
- In a cup, mix 1 tbs of instant coffee and a drop of boiling water until the coffee is dissolved, let it cool. Add this coffee mix to 100g of mascarpone, 2 tbs of honey and whisk until a smooth consistency is achieved.
- Heat Dromod Pancakes and plate up. Place the O’Neills Dry Cured Streaky Bacon on top of the pancakes, add a dollop of mousse, top the dish off with raspberries and drizzle with maple syrup and enjoy!
