Pancakes with Streaky Bacon

  • Prep time: 20 minutes
  • Yield: Serves 4 (depending on size of pancake)
  • 200g plain flour
  • 30 g caster sugar
  • 4 eggs
  • 400ml milk
  • Butter for frying

Toppings

  • 200g O’Neills Dry Cured Streaky bacon
  • Maple Syrup
  • Strawberries & icing sugar (optional)
  1. Sieve Flour into large mixing bowl
  2. Crack in the 4 eggs and beat in with wooden spoon until you have smooth paste
  3. Stir in the sugar
  4. Slowly add milk in stages until all used
  5. Leave to rest (half hour if time available)
  6. Meanwhile grill the streaky bacon – cooking slowly until slighty crispy. Keep warm
  7. Heat pancake pan on high then reduce heat to medium
  8. Wipe a knob of butter across pan or spray oil
  9. Pour in small ladle of batter and cook for a minute on each side until golden brown.
  10. Turn out on to a warm plate, drizzle with maple syrup and add streaky bacon

Garnish with a few strawberries and dust with icing sugar if desired
