Savoury Rice
- Prep time: 10 minutes
- Cook time: 20 minutes
- Yield: Serves 4-6
- 150g Pack Dry Cured bacon lardons or diced back rashers
- 1 tbsp Sesame Oil (if available, if not use your usual go to oil)
- 2-3 cloves garlic (optional)
- 3 eggs
- 1 x red pepper diced
- 1 x carrot diced (blanch for couple of minutes in microwave)
- 4 x scallions diced
- Broccoli – chopped into small florets (blanch for couple of mins in microwave)
- Optional veg: Courgette/mushrooms/sweet corn
- 2 tbsp Sweet chilli sauce
- 2 tbsp Soy sauce
- 1 tsp Oyster sauce (optional)
- Cooked long grain rice – approx. 2 mugs
- Heat the wok and add in a drizzle of Sesame oil
- Beat the eggs and add to the wok, stir and cook quickly and then remove and set aside
- Add the Lardons and fry until golden brown
- Add in the carrots, scallions, peppers and garlic if using (now is the time to add in any other veg you wish to use except broccoli)
- Stir in the cooked rice
- Add a good glug of sweet chilli, soy sauce and oyster sauce if using to preferred taste
- Mix well then stir in cooked egg and broccoli.
Ideal with lamb chops, baked salmon; great for freezing and ideal lunch box filler.
