Savoury Rice

Savoury Rice

  • Prep time: 10 minutes
  • Cook time: 20 minutes
  • Yield: Serves 4-6
  • 150g Pack Dry Cured bacon lardons or diced back rashers
  • 1 tbsp Sesame Oil (if available, if not use your usual go to oil)
  • 2-3 cloves garlic (optional)
  • 3 eggs
  • 1 x red pepper diced
  • 1 x carrot diced (blanch for couple of minutes in microwave)
  • 4 x scallions diced
  • Broccoli – chopped into small florets (blanch for couple of mins in microwave)
  • Optional veg: Courgette/mushrooms/sweet corn
  • 2 tbsp Sweet chilli sauce
  • 2 tbsp Soy sauce
  • 1 tsp Oyster sauce (optional)
  • Cooked long grain rice – approx. 2 mugs
  1. Heat the wok and add in a drizzle of Sesame oil
  2. Beat the eggs and add to the wok, stir and cook quickly and then remove and set aside
  3. Add the Lardons and fry until golden brown
  4. Add in the carrots, scallions, peppers and garlic if using (now is the time to add in any other veg you wish to use except broccoli)
  5. Stir in the cooked rice
  6. Add a good glug of sweet chilli, soy sauce and oyster sauce if using to preferred taste
  7. Mix well then stir in cooked egg and broccoli.

Ideal with lamb chops, baked salmon; great for freezing and ideal lunch box filler.
