Dromod Pancakes with Spiced Caramelised Walnuts, O’Neills Back Rashers, Blue Cheese & Honey

- Yield: Serves 2-4
- 1 Pack Dromod Pancakes
- 1 Pack O’Neills Dry Cured Back Rashers
- 200g Walnuts, roughly chopped
- 1tsb Chinese 5 Spice
- 50g Blue Cheese
- 1 tbsp local Honey
- Preheat your oven to 135 degrees. On a baking tray add 200g of roughly chopped walnuts, wet the walnuts with 5 tbsp of water, shake 1 tsp of Chinese 5 Spice over the walnuts, a pinch of salt, 2 tbsp of sugar & mix thoroughly. Bake in a preheated oven for 20 mins. Stir halfway through.
- Grill or fry the O’Neills Dry Cured Back Rashers until cooked through and crispy.
- Heat the Dromod Pancakes in a microwave or on a pan and begin to plate up.
- Place the O’Neills back rashers on the pancakes, scatter the walnuts and crumble 50g of blue cheese on top and drizzle with honey. Enjoy!
